Ghost Light Farm

Ghost Light Farm, located in Cambridge, New York, is owned and operated by the Morrow family.

Since taking over the farm two years ago, the Morrows have transitioned the land from primarily hay production to a thriving Black Angus beef operation. They raise their cattle using rotational grazing, focusing on sustainability and stewardship of the land.

“We care deeply about our animals, our land, the quality of our meat, and food safety,” says Kate Morrow. “It’s important for everyone to know that this is our food too—and that it’s raised with care.”

Their sustainable practices include a unique partnership with a nearby distillery, where they collect nutrient-rich distillers’ grain to feed their cattle. This not only provides excellent nutrition for the animals but also helps reduce waste in the community. 

 For the Morrows, caring for the land means preserving it for future generations. “It’s really important for us to be stewards of this land,” Kate adds. “If we don’t take the time, it won’t be here for our children and their children.” 

 Despite the challenges of farming in Upstate New York’s harsh winters, Kate finds joy and purpose in the work. “This is a really beautiful life. Even when it’s hard—20 below and icy—I feel thankful every day that this is what I get to do. This is the life we’ve chosen, and I really enjoy it.”

From start to finish animals are raised on this farm to be marketed directly to consumers through either freezer trade, farmers' markets, or at local restaurants. Farms direct marketing incorporate all steps in the beef life cycle including cow/calf, backgrounding, and finishing.
